The Past
Waightstills Restaurant & Tavern was born out of a deep respect for history, hospitality, and the spirit of the North Carolina High Country. Inspired by the legacy of Waightstill Avery, the first Attorney General of North Carolina and namesake of Avery County, the restaurant was envisioned as a gathering place that honored tradition while serving as a cornerstone for community life. Its early days were marked by a simple goal: to create a space where neighbors, families, and travelers could come together over good food, a warm fire, and genuine connection. The tavern side carried the timeless charm of an old English pub, while the restaurant side provided an elevated dining experience, both working hand-in-hand to offer something unique for everyone.
The Present
Today, Waightstills stands as a reflection of both its history and its growth. The restaurant and tavern have become a beloved part of Newland, NC — a place where visitors discover refined Southern flavors and locals return again and again for the familiar comfort of hearty meals and friendly service. By day, it’s a destination for breakfast and lunch, with menus that blend traditional favorites with lighter, modern fare. By night, the energy shifts to upscale dinners in the dining room and lively evenings in the tavern, where craft cocktails, local brews, and shareable plates fuel the conversations. The staff takes pride in making every guest feel at home, ensuring that whether you’re here for a casual burger, a chef-crafted entrée, or a round of drinks with friends, the experience is always memorable.
The Future
Looking ahead, Waightstills Restaurant & Tavern is committed to expanding its role as both a culinary destination and a community hub. Plans include enhancing private dining and catering services, introducing more locally sourced ingredients, and building seasonal menus that reflect the richness of the High Country. The tavern will continue to evolve as a social hotspot, with live music, special events, and rotating taps showcasing regional breweries. On the restaurant side, new chef-driven specials and curated wine pairings will elevate the dining experience even further. As Waightstills grows, one thing will remain unchanged: its dedication to honoring the past, serving the present, and shaping a future where every guest feels part of the story.
